Dark Chocolate Chip Cookies
1 cup coconut sugar
1 cup packed brown sugar
1/2 cup butter, softened
1/2 cup coconut oil
2 eggs
2 teaspoons vanilla extract
2 teaspoons hot water
1 teaspoon baking soda
1/2 teaspoon cream of tartar
3 cups flour
1/4 cup chia seeds
1/4 cup ground flax seeds
1/2 cup chopped walnuts
1/4 cup cocoa nibs
1 cup dark chocolate chips
1/2 teaspoon salt
Preheat oven to 350 degrees F. Line a baking sheet with parchment paper. Beat coconut sugar, brown sugar, coconut sugar, butter and coconut oil with an electric mixer in a large bowl until smooth. Beat eggs into creamed butter mixture one at a time. Add vanilla extract and beat until smooth. Stir hot water and baking soda together in a small bowl until baking soda is dissolved. Stir into butter mixture. Add cream of tartar; mix well. Mix flour into butter mixture until dough is smooth. Then fold in chia seeds, flax seeds, walnuts, cocoa nibs, chocolate chips and salt. Drop dough by rounded tablespoons onto prepared baking sheet. Bake until cookies are lightly browned around the edges, about 12 minutes. Transfer cookies to a wire rack to cool. Makes about 30 cookies.
